Mallorcan Ensaïmada
MALLORCAN ENSAIMADA ROLL FILLED WITH MOLE SAUCE ON A SWEET POTATO PURÉE, WITH RED FRUIT AND CHIPOTLE SAUCE

Ingredients
Roll 1 individual Mallorcan ensaimada (not sprinkled with sugar). 150g of Doña María Mexican mole paste 50g of canned tomato purée 150g of cooked, shredded breast of chicken 250ml of white stock (chicken stock with leek, onion and carrot) Sweet potato purée 100g of cooked sweet potato 50g of single cream 1 roasted, crushed clove of garlic Thyme and dill Chipotle sauce 100g of redcurrants 50g of pomegranate seeds 1 tin of chipotle chillies (keep the liquid) 50g of sugar 50 ml of water
Instructions
Mallorca ensaimada roll: Remove the crust from the ensaimada, without tearing it, and put it on one side for later. Put the mole paste and tomato purée in a saucepan and heat for 20 minutes. Add the chicken stock very gradually, keeping the heat down low, and the cooked shredded chicken. Put the mixture inside the crust of the ensaimada and roll it up. Sweet potato purée: Boil the sweet potato, keeping the water that you used to boil it on one side for later. Put the cooked blended sweet potato in a saucepan with the crushed garlic and add a little water that was used to cook the sweet potato. Mix it all well and add the cream. Add the herbs and stir well. Chipotle sauce: Make a coulis with the redcurrants, pomegranate seeds and sugar, adding water if necessary. Add the juice of the chipotle chillies to taste.
Presentation
Pipe the purée through an icing syringe to form shapes like duchess potatoes, place the ensaimada roll on the plate and decorate it with the chipotle sauce
